Super interesting & tasty wine. Paired super well with espegueti verde. The wine has some darker fruit notes like black cherry with a kiss of smokiness. Fairly mineral with a strong tannic astringency but a soft balancing acidity. The smokiness from the poblano pairs with the kiss of spicy smoke in the wine. The tannins and acid balance the earthy creaminess of the sauce and the pasta just doesn't feel out of place with wine from Italy's neighbor. — 6 days ago
