La Côte Sta. Rita Hills Pinot Noir 2018

I always have two wines to pair with an entree. Like variety. This has a beautiful herbal quality in it that pairs nicely as a follow up wine to my pork chop.

Here is the recipe. Try it sometime.

4-6 thick cut bone-in pork chops

- 1 cup hoisin sauce
- 1 1/2 tablespoons of sugar
- 1 1/2 tablespoons of Tamari soy sauce
- 1 1/2 tablespoons sherry vinegar
- 1 1/2 tablespoons of rice vinegar
- 2 scallions chopped
- 1 teaspoon Tabasco Sauce
- 1 1/2 teaspoons of Lee Kim Kee brand chili sauce
-1 1/2 teaspoons of ginger (I triple this)
- 1 1/2 teaspoons of garlic (again.
I double this)
- 3/4 cup of cilantro (no stems)
- 1 tablespoon of sesame oil

Grgich Hills Estate

Napa Valley Chardonnay 2022

Pale lemon color with aromas of ripe fruits, citrus, toasty vanilla oak and floral spice notes, no MLF. On the palate flavors of apple, peaches, mango and lemon/lime citrus, well balanced with acidity on a nice creamy mouthfeel. Long finish ending with spicy vanilla oak, mineral and citrus notes, will continue to age. A big Chardonnay. — 18 hours ago

This was awesome! Lovely darkish gold color. Aged apples to start then popcorn and subtle butter with more air. Very deep, thick wine. Well balanced and refined. — 4 days ago

Sta. Rita Hills Chardonnay

If there’s a better Chardonnay than this for $30 I don’t know it. All Domaine De La Cote fruit. Cru Burg vibes. — 2 months ago

M3 Adelaide Hills Chardonnay 2019

Clean apple and peach notes, some oaky/resinous funk. After an hour hints of matchstick and toast occur.
Very Nice.

Gaining complexity and depth after extended aeration. Up a notch,

First up, this is made by Master Sommelier-Raj Parr & his business partner Sashi Moorman. I studied for my Sommeliers test one day with Raj.

Second, this is one of few Santa Rita Hills I like. Most are over extracted for me. IMHO, many drink like Cabernet-Pinot blends. This is not. It is more Burgundian in style.

The 2018 is starting to come around. It shows some nice evolution & integration.

Lush & ripe entry of; blackberries, dark cherries, both plums, strawberries, black raspberries, raspberries, cranberries, dry herbs are bountiful, mid, dark spice, a touch of smoke, grilled meats, moist clay, limestone, dry top soil, some menthol, eucalyptus w/ bark, mid berry cola, red, dark, blue & purple florals for days, excellent round acidity, nice; tension, structure, balance & elegant finish that lands on spice & softened earth that lasts nearly two-minutes.
