Very dense in colour - opaque, almost black. Aromas of Cocoa, blackcurrant, spice and cedar. 69% Cabernet Sauvignon; 31% Shiraz. On the medium to full bodied palate this has contained latent power ensuring a long cellar life - at least to the end of this decade. Halliday says drink by 2040. I think this Cuvée became Yalumba’s top red Cuvée and is now known as The Caley. The quintessential Australian Cabernet Shiraz blend. I have 2 left. Next in a few years. Honeysuckle, unctuous and textural. A medium to full bodied white. Handpicked and wild fermented in old French Oak. Yalumba have now been working with this varietal for 40 years in the Eden Valley which has proven to be an ideal terroir for Viognier. The many types of oak create a lot of classic cab and Shiraz notes that evolve in the glass--black currant, graphite, clay, black pepper, cocoa, dill, vanilla. Plush blackberry jam on the palette. Super soft tannins typical of South Australia reds that barely need time to breathe. — 6 days ago
