Haut-Bailly Dinner in SF with Veronique Sanders of Haut-Bailly.

The 2008 is good but, has fallen back into a sleepy phase. Muted blackberries, dark cherries, black raspberries, black plum, black tea, dark cola, dry top soil, stones, dark, turned earthiness, dry fresh & withering flowers. Good mouth feel. It was better a few years ago. But, this will open up again and be much nicer. Hold another 7-10 plus years.

Served with Coq au Vin. Baby Carrots, Mushrooms, Pearl Onions & Red Wine Sauce. This is excellent preparation. So good! @Mathilde French Bistro

Very interesting and complex wine. Nose is cherry, tobacco and bbq smoke. Texture and mouthfeel is absolutely lovely - so smooth. Cherry up front, with some cassis and black fruit following, tobacco, damp earth, smoky, red licorice, hint of mint?, lots going on here. Really quite nice. Medium plus finish.

Red cherry twizzler pull apart licorice…. That’s what jumps out on the nose. With time and further investigation, there’s an herbal, minty note, dried tobacco, mulberry and a reductive medicinal cherry feel. Showing development and sweetness. Cherry, forest berries meet this dried sandlewood almost cigar box feel on the palate. Freshness hangs on with plenty of structure. Drink or hold.

70% CS and 26% M 4% CF

Deep crimson with slightly bricked tint. Youthful and compact rim.

Charming nose of creme de cassis, dark fruits, leafiness, with slight smoked meat on the background.

On the palate, things start to come together. Substantial but not at all spiky tannin, med plus acidity, med plus bodied, dry. Classic PL mouthful of gravelly tone, dark fruits with good ripeness, cassis, good acid keeping the freshness rather dimensional, good dose of mineral character.

Superb wine that will go the distance. Now with lots of air, ideally in 10 years time. 91+
