A blend from (57%) Estate fruit, and a sizable portion (18%) Mes Filles Vineyard. Medium Ruby color, purple edges, with aromas of ripe fruits, floral and complex spice. On the palate concentrated flavors of raspberry, plum and currants with pepper, tea, herbs, cinnamon and oak, soft tannins on well balanced structure. Chilled this burgundy felt restrained, minimal, and one dimensional. As it opened up though, paired with a delicious bouillabaisse, escargot and the best foie gras I’ve ever had, thus started to really come into its own. Medium body, a refined minerality but with delicious notes of crisp apple, baking spice, and an some richer, pastry like notes on the finish, this wine truly came into its own with some warmth and time. Not too rich, not too dry, a perfect balance of crisp fruit, minerality, and baked richness for shellfish dishes with a tomato base. — 3 years ago

L'Homme Mort Chablis 1er Cru Chardonnay 2020

Star bright pale gold. Shy but inviting nose and medium light palate of ripe green apple and flint. Medium acidity and flint mineral form the modest structure from entry to the moderate finish. Classic Fourchaume roundness with the extra mineral of the "dead man" makes for an excellent "all around" Chablis that can handle heavier fare than one would expect from the broader appellation. Weighty shellfish are naturals, of course, but roasted poultry or pork will also show quite well. Drink now through 2025. — 2 years ago
