So much of what I want in a textbook Albariño I love that there’s a body, a weight, and also a almost effervescence. This one massages and lightly scratches like the best of back rubs except it’s your tongue so get into that. Apples and greens and lilies are finished with cream and fleur de seal. Huge olive, big earthy herbal notes, almost eucalyptus. Bright sour cherry, chalky and alive, long bitter finish. It is a weird and beautiful beast...back one hour later. Huge metamorphosis to a dark fruit bomb with butter brioche and bitter chocolate. In Mexico they call this El vino loco. — 8 years ago

An interesting metamorphosis: at first taste last night, it seemed to be past its prime, with a brown sugar hint, and just a touch too much toasted oak on the nose. Come back to it tonight, and it seemed to bounce back to its prime, focusing on the fruit, balance and elegance we expected. — 7 years ago

Absolutely delicious champagne. I think the only other Dom I’ve had from 04 was the metamorphosis. This is much nuttier - in a nice way. Fine bubbles, great mouthfeel, very long finish, good acid. Overall perhaps slightly less refined and deep than I was hoping, but still a treat. Nice pairing with a shrimp etouffe that I was inspired to make after a recent trip to New Orleans. — a year ago
Cellared these since last summer and they’ve gone through an awesome metamorphosis. On release they were heavily acid driven with beautiful light fruit. Now the syrah and grenache really shine through while braced by that now integrated acidity leaving a beautifully limpid rose. Delicious. — 6 years ago

What a treat ! Beautiful structure, even at 20 years old. Still a yellow lemon color, not at all showing its age. Tiny and vibrant bubbles. Pastries, biscuits on the nose, beautiful rounded mouth-feel barely a hint of age. Never disappoints. Thanks Acquis, received in July 2015. Opening for a special occasion. — 7 months ago
