Crystal coloration, with hints of yellow colored deep within. Nose is actually prominent, with notes of tart stonefuit, specifically peach, African cucumber, and sharp acidity despite the age. Palate doesn’t show any age or loss of acidic zing! Fresh and dry, with a long tingle that lasts long after the sip. This is simply delightful, bloody awesome actually.
Typical Napa-purity and dito density, yet laced with Bdx-like treble-notes of freshness, acidity and transparency.
Served it alongside maigret/parsnip/anise-jus, but liked it better before and after this fantastic dish.
