3rd wine . Medium ruby garnet slightly brighter in colour . Lighter garnet ruby rim . Slightly deeper more meaty, herbal in character , more red fruits with cassis , cool blackberry. On the palate this is denser and more saline , quite good dark cassis and tobacco notes, with some red plum too . Lightly grippy tannins , slightly clipped finish , cool saline freshness . A little below the others in length and intensity . From now but will last over the next 10 years or so . Thought this was the Latour , oh dear . — 3 months ago

For steak dessert, 2007 Caymus Classic. Chuck, why oh why, did you change the original styling of this wine? 🤦‍♂️

I ran out of my cellared Caymus Classic. Classic is pre 2012 vintage. In 2012, it was changed to a highly marketable consumer friendly wine syrup that drinks well early for some. I can’t palate it.

I recently went to the secondary market and found some beautifully stored 2007. Missed it.

The nose reveals, stewed & candied; blackberries, black raspberries, both plums, black cherries, poached strawberries, raspberries, boysenberries, full scorched earth, grey clay, potpourri, dark under stated ambers, dark, moist forrest floor, dry sage, notes of Worcestershire sauce, eucalyptus with withering; dark, red, purple flowers.

The mouthfeel is glorious with balance & length. Ripe fruits of; stewed & candied; blackberries, black raspberries, both plums, black cherries, poached strawberries, raspberries, boysenberries, blueberries hovering over all the rest, scorched earth, dark spice with subtle yet punctuating heat, nutmeg, clove, cinnamon & vanillin, dry crushed, limestone rocks, grey, mud clay, potpourri, dark under stated ambers, dark, moist forrest floor, oak char, expresso, black licorice, dry sage, notes of Worcestershire sauce hues, eucalyptus/mint with withering; dark, red, purple flowers. The acidity is a rushing, spring mountain river. The length, balance fruit & earth, elegance, polish would captivate most any discerning palate.

Chuck, I think you should make both Caymus Syrup & Caymus Classic again.

She is at the tail end of her precipice.

A huge TY to @Ron R for this amazing bottle. The 1991 is drinking perfectly right now. Opened it to serve with some Northern Italian cuisine and this Spanish gem held its own, great paring! This wine is a gorgeous deep ruby color with flavor notes of fig, vanilla, cedar, and spice box. It hangs oh so elegantly on the glass. So happy I got to try it. I'm a big fan now! — 9 years ago

Wow. Big fan. Lots of bright red fruits like cherries and raspberries in the beginning. Great acidity. It is more earthy than I expected, but not unwelcome. I really appreciated the almost floral/rosy note that contrasts the brightness off the bat. Still pretty tannic, I imagine this would only get better with age. Tasted expensive. I have no clue how much it costs. Only improved with time/air as we ate dinner. Super cool to taste how it “opened up” and how it changed. — 4 months ago

Oh yeah, Raveneau! Heading out soon on a wineless trip (though I might whine), so I opened this on a whim and it stuns. Essence of Chardonnay with incredible minerality, acidity, intensity, focus--citrus zest magnified. Screaming for oysters, the wine has to be happy with just us drinking it. Drinking this pre-release bottle of this iconic wine from Bordeaux.

Light gold in color.

Strong nose and Full-bodied.

Sweet on the palate with high acidity to balance the sugars.

Showing melons, tropical fruits, apples, light earth, guava, herbs, spices, papaya and honey notes.

Long finish with herbs and tropical fruits.

This is a gorgeous sweet wine from Bordeaux. Sexy, seductive and fresh. Creamy and buttery.

Showing great potential, but oh so young. Already delicious and complex. Round, opulent and powerful.

Loved the nose once it opened up (20 minutes in the glass).

Rich and extracted. Fruit forward and intense, yet elegant. Well balanced with a soft mouthfeel.

Good by itself as a sipping wine, or with food. Drunk from a Magnum.

A blend of 75% Sémillon and 25% Sauvignon Blanc. Aged in all new French oak barrels for 24 months.
154 g/l sugar.

14% alcohol by volume.

1985 vintage. Decanted and open 3.5 hours before tasting. Oh hell yes. Can go another 3-5 years in this end-game, optimal drinking window, Beguiling nose filled with feminine cocoa powder. A flavor/tasting sense of eternity here. Underrated property that usually gets plenty of recognition but ages better than expected.
