OHMINE 3GRAIN OMACHI — 5 months ago
This was all part of our Sake Day 2025 experience. We only tasted 60ish sakes out of an estimated 450, so a small fraction of what was available. While I attempted to rinse the glass with water and stay hydrated it’s difficult to fairly rate in this environment and I use it solely as a time to try a wide variety and interact with the brands. A micro-brewery at the foot of Mt. Tsukuba, run by Nobuko Inaba, doing every step by hand. The Premium uses only the first free-run drops from the hanging bags, bottled unfiltered, undiluted and unpasteurized. Expect pear, muscat and floral notes on a soft, round palate.
Tasted at Sushi Kinsen, Redwood City, 10/24/2026. Good. Would have gone with this if I hadn't tried the others ;)

Houken Junmai Ginjo “Kure”/ Houken Shuzo Co. Ltd./ Hiroshima prefecture, Japan/ rice species: not disclosed/ light hint of apple and Koji mold, crispy attack of bitterness and fresh clear acid with light smooth sweetness. Totally not rich but crispy keen edged taste. — 10 months ago
From publicly snubbing the saké authorities to collaborating with Pharrel and Nigo, Ohmine is as cult as it gets as a saké producer. So colour me surprised when the Ohmine saké's became available in Malaysia. Gosh, our local saké scene never ceases to amaze me.
The 2 Grain's probably a Junmai Daiginjo, but with their rejection of typical saké terminologies, we will now "never" know. Clean, pure, and fruity, with a weighty glycerol-texture and prominent rice sweetness in the back end (sugary almost). In fact, this was one the cleanest sakés I've ever had. The wife loved it for this very reason! KK found it a little too rich, which I understand - the sweetness and ripe stone fruit profile can be too much without more acidity. For me, I found it enjoyable. My only gripe was the noticeable alcohol despite being low in alcohol in the context of saké. I think it could have benefitted from more air. — 5 years ago

Alt.3 means "alternative third choice." Kikumasamune carries no grade on this one on purpose. Their position is that Japan judges sake almost entirely on polish ratio and that competing globally means building value somewhere else. So this is a blender's sake rather than a milling-spec sake.
Had it at a kappo counter, out of an ice bucket, four years past bottling.
Medium to lighter weight. Not heavy. Fills the mouth without being explosive but still reads full. Slight bitterness on the finish that tightens it rather than intruding.
The thing I keep circling is a savory note I have had trouble naming in other sakes. Yogurt, slight sour, light caramel, maybe dried apricot. Not a fruit. It is the kimoto lactic character coming through the blend, and it is strongest cold and pulls back as the glass warms. Better warm for me. Pull it out of the bucket early. — 2 months ago

Importer: Sake Suki, Bridgeport, Pennsylvania
Purchase: True Sake, $68

Ohmine reopened in 2010 after a 50-year hiatus. Its soft spring water and minimalist brewing approach produce expressive, fruit-forward sake. Aiyama is prized for its ability to produce rich, rounded textures and pronounced fruit character.
My tasting notes: I may have found another rice varietal I really like besides Yamada Nishiki. Not as crisp or sharply delineated, but round, smooth and lush. Sweet with a distinct honeydew melon note. Very light effervescence with a subtle carbonic bitterness that adds some balance. Consistent with my previous tasting. Excellent sake, though probably better before dinner than with delicate sushi. 94 points. — 9 days ago
