@Dave, interestingly enough, Sacramento lies at the confluence of two rivers — American and Sacramento — in the area north of downtown Sacramento, there are weirs/causeways that handle flood problems (rant: because we Californians allow most of our excess rainfall to flow into the Pacific). Anyway, sturgeon, which is farm-raised around here, is big business in this area, I *believe” it produces more U.S, caviar than any other state. And the thing with farm-raised sturgeon — they are HUGE (50+ pounds) — so the local fish markets occasionally have it, very rich flavors!!

So, NO fly rods were involved, I generally hate fishing!! 🤷🤷

Lovely NV Brut Friday from England, tiny bubbles, this is quite fine and lovely, opened to accompany my crazy wife’s order of local caviar (Sacramento has a local producer — Sterling) who farm raises sturgeon, which is great, and of course caviar, which I’m not really wild about myself). Ergo this Winston while the rib roast does it’s thing on the Weber!! LOL — 4 years ago

@Tom Casagrande, actually Sacramento, near the airport, is one of the largest sources of caviar (and of course sturgeon) in the U.S., so it’s relatively cheap and also plentiful year round here — I just indirect grill it, and my wife may put a simple lemon butter sauce on it.

This is the Rare Wine Pairing we had tasting at Lazy Bear. Paired with: White Sturgeon, California Caviar, Apple, Wild Foraged Greens & SF Halibut, Sorrel, Buckwheat, Cucumber. Muted on the nose initially. Opened up over the course of the meal. Fresh citrus, salty salinity, melon. Such a richly textured wine on the palate: honeysuckle, pineapple, orange blossom, mango, grassy characters too. High acid, long finish. — 4 years ago

San Valentino Sangiovese Blend 2016

Opened and decanted about an hour prior to service. The 2016 San Valentino is a blend of mostly Sangiovese mixed with some local varieties. It pours a deep ruby purple with a near opaque core; medium+ viscosity with light staining of the tears. On the palate, the wine is developing with fascinating notes of ripe cherry, blackberry, exotic spices, wild underbrush, old leather and rich woody notes, some VA and dried rocky earth. On the palate, the wine is dry with medium+ tannins and medium+ viscosity. Confirming the notes from the nose. The finish is long and lovely and despite the concentration of flavors, surprisingly nimble and super versatile with the variety of fare on the table including sturgeon in a miso with noodles (it kinda blew my mind actually). Sublime. Drink now with patience and through 2036. — 2 years ago
