Movie night! Pig with Nicholas Cage, Soothr Thai — 3 years ago
First bottle of my 2019 WSU Auslesen from Prüm, and only my second ever Auslese from the estate. I think I knew what to expect from this wine, and sure enough it’s really closed down at the moment, with some spellbinding characteristics that need time to knit together. There isn’t a great deal to the nose, but the palate is gorgeous, very tropical, sweet but featherlight, with some pleasing bitter orange flavour that appears after two hours of air. It seems quite low in acidity, a characteristic of the vintage, and slightly incomplete at present but a joy to drink and a great match for Thai curry.
Eleven more bottles in this case and I shan’t open the next for another five years at least! — 2 years ago
Orange blossom and the slightest touch of residual sugar to balance out the razor sharp acidity (and balance out my spicy Thai food). This is a light wine but I can almost taste the slate soils and steep slopes.
Whole-cluster grapes and spontaneous fermentations

vineyard work: All vineyard work is done by hand due to the incline of the vineyards. Absolutely no use of insecticides/pesticides or
fertilizers; the work is completely organic but not certified as such because Florian refuses to spray copper on the vines. — 8 months ago
Showing very well. Paired beautifully with some elevated Thai — 3 years ago
So good with our exciting upscale Thai meal at Nari in SF. Pineapple, honeysuckle. Nice acidity that paired beautifully with our seafood centric dinner. — 3 years ago
On the sweeter side and fruity but actually paired really well with pad Thai. I wouldn’t necessarily drink with all foods but it worked well. — 4 years ago

Someone had to bring something proper to Thai, may as well be me. — a month ago
