Springfontain Sauvignon Blanc skins agleam aus dem Holzfass, bzw den drittbelegten Barriques. Man mag ihn oder man mag ihn nicht.

Aged in used barriques and from a brilliant vintage this is a stunner!
Cool & focused on the nose with some popcorn reduction, fine herbs, a touch of toasted nuts and faint exotic fruit in the background. Enticing!
But the real magic happens on the palate - precision, depth, an electric tension between the creamy mouthfeel and the juicy, racy, mineral acidity. The limestone minerality bites through. This just begs for another sip!
Notes of sesame, fine herbs, exotic fruit - the wood adding a touch of nutty weight in the backdrop. So finely integrated. And the mineral edge towards the v. long finish

Ok. Not sure when I’m going to even taste this the nose is so good. Crunchy confectionary sugar. Perfect apricots. 10/10 intensity. Wow.
Palate is even better. You need to close your eyes to avoid sensory overload. Perfect peaches on a summers day. Dense but notthick. So bright. Not at all cloying.
This has the density and flavor profile of great auslese but it tastes more like wine if that makes any sense. Not thick. Not cloying. Not unctuous. It just is what it is and that is is amazing.
The flavor profile is what you’d expect. But what makes this special is it’s so clean and precise.
The finish is even better than a perfect peach. A perfect peach is too acidic and tooth scraping. This is just a hair shy of that level of acidity. You get that perfect fruit acid balance without the tooth pain.

Strawberry, herbs and a juicy acidity are making this pinot a very enjoyable drink. The alcohol is somewhat present in the nose and on the palate, but ist doesn't disturb the aromas at all. For 7€ this is a no brainer with no edges but elegant fruits. — 4 years ago
