First time with this since June 2023. Super saline nose, green apple, almost like inner earth minerals from some long abandoned rock quarry. What a palate. Unreal mousse. Super toasty and yeasty and the caressing mousse is just brilliant. So juicy and unreal lime zest, flesh and meyer lemon and faint but ripe green apple. It’s so lush but also a mineral explosion. Unreal. What poise and texture. So sappy and complex. Unreal structure. Juicy and so clean but needs air and air it will get. Wow with air what cut and salinity. The minerality is nuts — 7 months ago
