Sweet, but not too sweet. Drink this one quickly, as I had a couple bottles that went bad the first year they used the twist cap rather than the cork. Such a cool tasting room if you ever get the chance to visit. — 9 years ago

Dark ruby in color with a pretty reddish rim.
Fruity nose of blackberries, black currants, cooked raisins, cedar, figs, vanilla, licorice, chocolates, tobacco, herbs, Mediterranean spices, coffee, light earth, eucalyptus and mint.
Full bodied and smooth, with medium acidity and long legs.
Dry and fruity on the palate with black currants, cooked plums, oak, vanilla, raisins, eucalyptus, earth, tobacco leaf, herbs and peppercorn.
Long finish with fine grained tannins and tangy cherries.
This is a fantastic Cabernet Sauvignon from a great vintage in Napa Valley. This Single Vineyard is elegant, rich and fruit forward.
Good right out of the bottle and better with airtime. Peaked at 3 hours in the decanter.
This 9 year old is drinking very nicely now. Showing nice complexity with a soft mouthfeel.
I've had it over a year ago, and it is drinking even better now. Peaking now, and will continue to drink nicely in the next few years.
A blend of 95% Cabernet Sauvignon with some Merlot and Petit verdot. Aged for 28 months in mostly new French Oak barrels. A tiny production of less than 5 barrels.

Peach cobbler, caramel-apple, baked pear tartlet, pine nettle, sweet corn, dried red cherry, cedar-on-grill, brown sugar, nutmeg, cinnamon, chilies, generous oak that includes acorns, crisp vanilla cookie make the nose. Hot initially, with oregano oil, cinnamon and tobacco. Revisit yields subtleties, including lemon oil, grapefruit pith, orange peel, arabica, eucalyptus, apricot, red chilies, Mexican cigar spices, and peppercorn dust. Cinnamon-oak builds to a crescendo of resinous might in a cloud of foundry smoke. Allspice appears with oregano following hot on its trail. A very nice Mild. Smooth, dark brown with malt and hints of caramel.
The joy of this beer, aside from it being in the footsteps of the traditional mild, is that this recipe and the original brews were all done by the brewer's apprentice.
Foundry Mild was so popular in the Brewery Tap that it has entered full-time production being available in draft and bottles.
