Double-decanted about two hours prior to service. The 2007 Galitzine pours a deep garnet color with a slightly tawny color towards the rim; medium+ viscosity with moderate staining and some signs of fine sediment. On the nose, the wine is vinous with ripe and slightly desiccated black fruits: blackberries, currants, black cherry, tobacco, chocolate, leather, earth, some vanilla and baking spices. On the palate, the wine is dry with medium+ tannin and medium+ acidity. Confirming the notes from the nose, the finish is long and pretty decadent. Considering the vintage, this had held up pretty well and even though it’s not really my style, it’s executed well. Drink now with a decant and through 2027. It might go longer but I don’t have enough experience with QC to understand the aging arc. There’s certainly no shortage of fruit.

The 2007 Quilceda Creek ‘Galitzine Vineyard’ Cabernet Sauvignon is showing marvelously at more than a decade old. On the nose this shows copious dark fruits with graphite and creme de cassis aromatics that continue to build in the glass. The palate shows a seducyitve side with moderate tannins that round out following a two hour decant. Blackberry compote, mocha, sandalwood and chocolate covered cherry flavors all combine nicely. A stunning wine now, this will continue to show well for at least another decade. Drink 2019-2019- 96

Tons of mint, pepper some green some black peppercorn, some dark red fruits, stone, long tannin still. After awhile open I also get a tart candy component I really like. I’m curious to see bottle variation on this one. I also think it may have needed a decant. When I think of 2007 Bordeaux this would fit right in.

Wonderful nose upon opening, and it improves tremendously with an hours decanting. Tight at first but the tannins soften nicely in the glass to make for a mouthful of Cabernet joy! Well balanced and exceptional with food (red meat). Worth the RP score - perhaps a little high.

This was incredible. It took 20 minutes to MacGyver the cork out of the bottle but the contents were impeccable. A beautifully aged Cabernet, smooth tannins and an intoxicating mid palate dominated by cassis, a bit of spice and plenty of dark currant. Yum!
