Entry-level white wine from the good sisters of the Monastero Suori Cistercensi in Vitorchiano, under the tutelage of Paolo Bea. Blend of Trebbiano (45%), Malvasia (35%), and Verdicchio (20%) from organically-farmed vines rooted in volcanic soils. Fermented in stainless steel with indigenous yeasts and about 1 week of skin contact. Rich, ripe, complex nose, with aromas of pear skins, apricot, honey and notes of iron and herbs (fennel). Dark ruby color with garnet highlights. Aromas of dark berry fruit, eucalyptus, garrigue and dried tobacco. Flavors of blackberry, black plum, roasted herbs and coffee.
