Neat how with age this turns into a dill monster but young it’s fresh and tons of apple, pear, and maybe some saline — 3 months ago
Orange blossom and the slightest touch of residual sugar to balance out the razor sharp acidity (and balance out my spicy Thai food). This is a light wine but I can almost taste the slate soils and steep slopes.

vineyard work: All vineyard work is done by hand due to the incline of the vineyards. Absolutely no use of insecticides/pesticides or
fertilizers; the work is completely organic but not certified as such because Florian refuses to spray copper on the vines. — 5 months ago
The pairing with tuna crudo, with ponzu, shiso, and pear is amazing. — 3 months ago

Shared w friends & paired with strong, savory & spicy Jollof rice, braised chicken in coconut milk. Gorgeous copper orange tints; on nose tangerine & pomelo pith, heart of palm with those citrus notes carried into palate; sweet almond paste; silky, enveloping texture too, which makes pairing w spicy food so natural. Just a lovely drinking experience of a 33yro Spätlese — 16 days ago
