Cherry and leather nose. Mid range palate , smooth at first, not heavy, really opens and shines with a Sunday gravy meat sauce.
Evidently, Catignano is a specific, higher elevation plane, and or in this case, an organic offering from Dievole. They sure do put out quite a bit.
As the wine opens w protein and acids, it’s rather tannic and juicy in the inner mouth. A surprise of quality from a large scale producer. It’s nice leathery, cherry, mineral Sangiovese perfect for tomato based pasta dishes.

Pale garnet in color, this wine presents pronounced aromas of macerated cherries, with subtle hints of menthol and dry earth. I did not notice any floral notes.
On the palate, the wine confirms the nose, displaying medium-plus tannins and medium acidity, with a medium finish.
I believe this wine could benefit from a couple more years of aging in the cellar, although I really enjoyed it. I look forward to trying it again in 2027 or 2028. — a year ago

Lovely perfume of red fruits, spice and earthy gravelly notes. The same characters come through on the light to medium weight palate with spicy top notes. Fine tannins. Not for cellaring, great to drink right now. First time with this small family owned producer and it won’t be the last. I also bought 2 bottles each of their Gigondas and Vacqueyras Cuvées when I bought 2 bottles of this Cuvée. Great value at only $40 AUD. I had my last bottle of Sablet 33 weeks later on 7th July 2026 - very satisfying. Will be on the lookout for next year’s release. — 8 months ago

2015 is surprisingly restrained and muted in the early going, really taking a while to show aromatic presence. Delicate rose bouquet, faint layers of tobacco, spice and decaying autumn leaves in the background. But on the palate it is showing the texture of pure silk, with seamless structure and impossibly smooth contours. Gentle tannic grip and very deceptive concentration. Needs bottle time for flavor development, but already a pleasure to drink for its purity, finesse and elegance. — 7 years ago
2021 vintage. Last tasted 3.19.25 (9.2). Decanted and tasted after one hour. Was medium-medium heavy body but gained some weight in the last year. Now medium heavy. Smoky nose. Velveteen fruit. The description: A brilliant Rosé for food pairing. The nuances of red berry, lemograss, yellow stone fruit with a little bit of oak are noticeable on the nose. On the palate, the wine is dry with a fresh and fruity attack. Pretty gourmet finish that calls for a sunny and delicate cuisine.
