This is a blend of Pinot Auxerrois, Chardonnay and Pinot Gris. You know as soon as you taste it, it’s not the three traditional grapes associated with champagne or sparkling.
Lemon, lime pulp w/ zest sprinkled in, some beeswax, green apple, tropical melons with some honey dew rind, pineapple juice, cream that is slightly whipped, sea spray, some sea fossil notes-oyster, understated white & chalk, volcanics, limestone, bread dough notes, yellow lilies, spring flowers, round acidity with a decent finish that is highly polished & leans more into fruit as it sets. — 4 days ago
