I had this in February, and the tannins seemed to be smoothing out, so I opened another bottle to pair with mushroom risotto. Unfortunately the tannins are still a bit too much for risotto. This needs braised meats or ribeye. Still, this is really tasty, and the tannins are drying on the palate but manageable if paired right. On the nose, inviting notes of dark cherry, tar, anise, and cloves. The flavors come through on the palate, with a beautiful cherry spice dominating. Long finish with mushroom and balsamic flavors accompanying the cherry and spice. Super tasty. — 20 days ago

Popped and poured; enjoyed over the course of a few hours. The 2017 Pajé pours a garnet color with a transparent core; medium+ viscosity with no staining of the tears. On the nose, the wine is developing with notes of Morello cherry, cranberry, freeze dried strawberry, ground cumin, tar, talcum powder, old cedar chest, some varnish and dry gravelly earth. On the palate, the wine is bone dry with high tannin and medium+ acid. Confirming the notes from the nose. The finish is medium and loaded with savory minerals. Still very much in its youth, this was a lovely solar expression of Pajé. Drink now with patience through 2047. Bottle No. 2045/6666

On the nose, the wine is developing with powerful notes of Morello cherry, raspberry, cranberry, red flowers, orange zest, some tar, talcum powder, dried herbs and dry, organic earth. On the palate, the wine is bone dry with high tannin and medium+ acid. Confirming the notes from the nose. The finish is long. This is about as sapid of a young Classico I’ve had from Produttori. It’s a bold wine right now but some time on its side will bring more into balance. Drink now with some patience through 2051. — a month ago

Upon opening, the tannins were overbearing, but after a two hour decant it opened up and softened nicely, with cherry, anise, earth, violets, and roses coming through on the nose. On the palate, the anise and floral flavors shine bright, and the finish is exquisite, with the floral notes providing a vivid, persistent finish with underlying notes of spice and earth. The wine has a smooth mouthfeel, with tannins providing astringency on the finish. Such a beautiful, elegant barbaresco that paired wonderfully with tagliatelle bolognese. — 6 months ago
