The NV Extra Brut Blanc de Blancs Crémant du Jura BBF blends base wines from the 2018 and 2019 vintages. A single-varietal Chardonnay, it showcases intense oyster shell, ripe apple and pear as well as subtle brioche complexities. An incredibly powerful, oxidative wine from Jura. The intensely nutty, salty, oily, honied flavors were magical with the “Pastured chicken, preserved lemon, garlic confit” dish which tasted braised and white-saucey.

Had Tissot’s cuvée a few weeks ago and loved it so decided to try their 100% Trousseau. Decanted for about 20 min before diving in as we felt the cuvée benefited from air as we drank it. Red cherry, raspberry, some strawberry. The funky fruit character in the beginning blows off as it sits. A wine you can sit with and drink academically but also easy enough to drink without thought and blissfully enjoy. — 3 months ago
