The 2016 Cabernet Sauvignon Mon Chevalier is still a baby. I would not bother opening a bottle anytime soon. Dark and potent, with huge tannins, the 2016 packs a serious punch of intensity. A whole range of floral and mineral notes begin to emerge, but the 2016 is searing in its intensity. I expected a bit more here given the pedigree of the year. Perhaps that will come in time. Good smoke, black berries, cherries and a slight hint of vanilla. A bit pricey at $32 but does not disappoint — a month ago
Spicy and interesting Mallorcan wine with a ton of local character. Callet really has some wild flavors, big fan. — 2 months ago

Should not have kept it this long - the pain of offsite storage but it’s still very nice. The nose is light/gone, buttery smooth with a light finish. Can’t recall how much acid this had early on in its life but it’s only there lightly now. Not dead but I’m drinking these asap. — 4 months ago
