Dang, this is a good Chardonnay! White burg is one of my fave styles, and this certainly meets it. Floral, grassy nose. Green apple and preserved lemon peel. Pale, clear color. Floral, roses, 100% whole bunch, red apple, sweet red cherries but darker, sensational aromas, more, spices, baking spices, some rare underarm. wood shavings, so high toned and intense and such fine, silky tannins and all red fruits and barely sweet. what complexity, and unreal red fruits, energy and tannins, so so good. big structure and density. Long and such an echoing finish. Just an iconic wine. Just a crazy good wine. Earthy sweetness and sweetening up but it’s so not sweet just so on the edge. So so dense. So tight. So coiled. So elegant. So concentrated. Structured. Checking in tomorrow. Nose is so floral, a day later. Very mineral and so expressive. Palate is enormously complex, chewy and dense. My goodness the density of this wine is just insane. It’s barely budged overnight. Fleshier, yes but also there still is more to come. (2020)Unreal nose, so salty, so briochey, so good. Unreal depth, so complex and serene. Salty and creamy, so and so dry and has to be zero dosage. Reserve wines and mostly 2020. 2 years on yeast. Unreal mousse. 1.4 dosage. Extra Brut. Sapid, so elegant and just crazy bubbles. saline and salty and also brown butter. Stunningly pure. Made in the evacuation bunker of WWII. So fine. So great. Wonderful. 100% Pinot. BDB coming. Nose is so precise. The brioche is so clearly defined. — a year ago
Great CA Chardonnay. Balanced, not overly oaked, not really buttery. Fresh and delicious lemon, yellow apple, underripe pear. It doesn’t have the electric acidity of the Adank Swiss Chardonnay I just tried, but it’s delicious in its own softer, more subtle way. What a nose, slate and dirty reduction, unreal florals and depth, 15% whole bunch, roses, violets, such depth and so pretty, so juicy and so clean, ripe and juicy and significant tannic structure, delicate, big acid and wonderful freshness. keeps tannins in the mouth big time, long , this is a cellarable wine. As this aired the tannins became more silky and the fruit sweetened up but it became not sweet but barely sweet. Compelling wine and one of the best Swiss Pinots. — a year ago

Fresh sour cherry nose, some Kirsch (not enough decanting). Cherries, dried raspberries, bell pepper, soft tannic bitters, pinch of white pepper and red licorice. Great structure and mouthfeel. 13% abv. A super solid baseline for quality Swiss Pinot. The Adank Chardonnays are so impressive, and my first taste of the reds doesn’t disappoint.
