Unique in that Sylvain Pataille only uses his best grapes in this Rose. I was lucky enough to get a couple of bottles. Shared with Matt and Paul. Stunning bottle. A distinct shade of medium old gold with with persistent little bubbles. The nose is resplendent with apples of the green variety. An abundance of citrus scents along with yeast and a touch of nuttiness. Just a bit of smeared honey aromas goes a long way here.
Biodynamic and beautiful. Zero dosage and aged for six years, the strength here is balance and purity. Terroir driven and electric, this is an incisive and focused champagne. Composed of 85/15 Pinot Noir/Chardonnay and wonderfully dry. Lemons and dried herbs on the palate along with cherries and apples. Long and dry and lovely. — 3 months ago
