White Rhone valley varietals and oysters...not a classic pairing, but why not its Christmas eve.
1.5 hour decant. A majestic light murky gold color. On the nose: lemon, vanilla nuts, apricot, honey, peach, oyster shells. Taste: smooth, creamy, oily mouth coating wine with white peach, lemon, mango, salinity, oak, white pepper and minerals. YUM! — 2 years ago
A deep golden straw color leaps from the glass with heady aromas of apricots, white peaches, dried pineapple, lilacs, vanilla, clove and a touch of flint. Densely packed, round and seamless on the palate the wine is stuffed with an array of stone and tropical fruits crossed with a racy acidity and an über long finish! — 3 years ago
I don’t usually worry about whites having time to open up but this needs the time. Powerful wine - I’ve hard people say it’s oily and that makes a ton of sense to me. I taste the Roussanne more than Chardonnay but the little bit of Viognier comes across on the nose. I think I like the Sin Qua Non better. — 9 months ago
30 min decant(little cloudy sediment). A formidable medium garnet color with some bricking. On the nose: perfumed notes of raspberry, vanilla, forest floor, and cedar. Taste: A creamy, juicy, balanced wine with red plum, smoke, touch of blueberry, minerals, earth, spicy vanilla oak, and a medium finish. Sticking pins in my Packers doll and crossing my fingers, let's see what happens. — 3 years ago
Citrus and stone, zippy. — a year ago
A bright beautiful crimson ruby red in color. Nose - candied cherry, vanilla and a barnyard funk are the initial aroma scents followed by cedar, spice and florals . Taste red-black fruits, vanilla and cedar hit the palate with a mild tannic kick and notes of chocolate strawberry espresso and a long dry finish. We’ll give the next bottle a little more time to see how all its flavors come together. A big wine for sure and fun to try for the first time. — 3 years ago

3 hour decant(some cloudy sediment). A majestic deep purple color. On the nose: captivating nose of dark berries, baked ham, ground spice, floral and herbal notes. Taste: velvety, rich, big wine but not heavy with dark cherry/plum, leather, gamey, bitter chocolate, and a spiced cedar licorice long finish. YUM! — 7 months ago
