The pairing with tuna crudo, with ponzu, shiso, and pear is amazing. — a month ago
Enjoying it! Citrus notes, sweeter than expected but not too sweet at all. Acidic front with lingering citrus. — a month ago
Should not have kept it this long - the pain of offsite storage but it’s still very nice. The nose is light/gone, buttery smooth with a light finish. Can’t recall how much acid this had early on in its life but it’s only there lightly now. Not dead but I’m drinking these asap. — 3 months ago

Sipping wine with a wonderful aroma
Drank as part of the SortedFood wine tasting — 2 months ago
Orange blossom and the slightest touch of residual sugar to balance out the razor sharp acidity (and balance out my spicy Thai food). This is a light wine but I can almost taste the slate soils and steep slopes.
Whole-cluster grapes and spontaneous fermentations
