Clear deep gold. Abundant, genie-like nose of baked apple and birch. Medium palate confirms the nose -- the apple is green -- with a hint of ripe pear and mineral notes with solid, medium-plus acidity tempered by the barrel treatment. The Classique draws from the top vineyards around lower Seneca Lake, and the result is among the best the Finger Lakes has to offer. Excellent all-around white for rich seafood, pork, or poultry dishes, and especially the Thanksgiving table. Drink now 2021 through 2026. — 3 years ago

2017 Ravine White Springs Vineyard Dry Riesling (Finger Lakes). Nine years old and still seems youthful. Great nose of zesty Granny Smith and slightly unripe Cortland apples and lots of high-toned stony minerality. Palate is concentrated and intense, lots of crisp acid to balance the deep fruit and intense stones. Wine #5 from my mixed case of Finger Lakes wines. I love the wines coming out of Ravines. This Dry Riesling from the White Springs Vineyard is absolutely delicious with notes of ripe juicy green apple, citrus, white peach, fresh cut green grass, lemon verbena and limestone. There is definitely some residual sugar here, but the medium plus acidity balances it out nicely. Cheers! — 6 years ago
