The 2021 Cabernet Sauvignon Hilltop lifts from the glass with a peppery freshness, mixing hints of sage with chalk dust and blackberries. It's soothingly round and supple with ripe red and black fruits underscored by saline minerals as grippy tannins mount toward the close. v21. As soon as you open , pour and sniff…imagine crushing a bunch of Cabernet grapes in your hand in the barrel room of a winery, this is the smell you get opening this wine! This wine consistently over delivers.
Nose evolves to soft tobacco.

Pop and pour. A majestic magenta color with bricking. On the nose: port type nose with dark fruit, musky earth, worn leather, black olives, and minty menthol. Taste: blackberry, woodsy, smoke, graphite, dark chocolate, and a peppery astringent tar medium plus finish. Not the best showing of aged Cali cab, and don't think it will improve, so drink em if you got em. Still enjoyed it tonight. — 5 months ago
BAM goes the nose. Full of banana, minerality, slight petrol, mango, grass, and more. Palate isn’t quite as full. That plus medium minus acidity drops the score a little lower than other Wiemer rieslings. — 13 days ago

[8 hour decant] The spirit in this bottle seems non-integrated, which is the first 1985 Graham’s we’ve drunk where I recall this being the case, this is less sweet as well, so ultimately a good, but not great, bottle of 1985 Graham’s. We’ll see how future bottles of this wine show. — 12 days ago
