Quite light straw . Very complex and taut on the nose , with crushed shells , touch of honied citrus fruits , gun flint , green apple , camomile . On the palate this is very mineral and intense with chalk dust and citrus , apple peel , really long and mineral . Good volume but really excellent balance . Perfect fresh acidity, and saline mineral intensity on the finish . Constant notes, this one has a more muted nose at first then opens up to a mineral stony profile, light pastry aromas, honey, buttery slightly and very Chardonnay like. A very smooth, and creamy palate with great tension, vivid and intense, yet finesse, class and elegance are there, very small and tight bubbles, long delicious finish with that irresistible mixture of energy and class. 93-94
Notes constantes, nez plus discret au départ que la dernière bue il y a quelques semaines mais le nez ouvre sur une belle minéralité, brioché et très Chardo en style, fruits blancs, un peu miellé et beurré. Blend of 65% Merlot and 35% Cabernet Sauvignon. Interesting wine based on the fact that age has really mellowed it. Nose features violets, asphalt, Forrest Floor with a note of dark cherry/cassis fruit. Dark berry fruit is muted on the pallet with hints of dark chocolate. Soft tannins on the medium finish. Robe rubis claire, pas la plus dense. Un nez qui semblait poussiéreux au début mais qui s'ouvre vers du fruits et de chocolat. Le bois n'est pas totalement intégré. To Pauillac last night and what was a muted but enjoyable claret. More tertiary-driven flavors like tobacco and lacking some fruit. Nose was completely unyielding. That said, the classic Pauillac flavors in a well-structured wine - enjoyable with coq au vin. — 6 years ago
Haut-Bailly Dinner in SF with Veronique Sanders of Haut-Bailly.
The 2012 is living up to its reviews. It’s good & well priced. The dark fruits are ripe, juicy, cola notes, menthol, dark, moist, turned earth. Drinking nicely now but, still a hold for another 5 years plus.
Served with Coq au Vin. Baby Carrots, Mushrooms, Pearl Onions & Red Wine Sauce. Mathilde French Bistro
