On the palate, it's super - complex, layered and lengthy. And the fact it's only Disgorged last year...wow! My first Selosse. I now know why it's so hyped and I cannot disagree. Medium lemon colour . Lovely lemon, buttered pastry nose , still so fresh and lively . Mineral with a honeysuckle note , touch of blanched almond . On the palate quite rich and complex , with high acidity and mineral , honied , brioche notes , still quite fresh though with lots of creamy lemon hints. Long mineral tinged finish . Yeah it’s just so damn layered and delicious, big punch of acidity but that extroverted fruit and I assume decent dosage to round things out - makes it a pairing ace. It is so enjoyable even as it completely loses all bubbles and comes to room temp in the glass, which is the mark of a great 🍾 IMHO.
