Rich black cherries, cocoa spice, orange peel, dark flowers, subois and earthy.
Long generous finish with crisp acidity and fine grained tannins.
This was bequeathed to me years ago at a Celebration of Life for a gentleman who was greatly influential and guiding on my wine journey.
A stunning wine from an incredible individual.

Great fill, first 2/3 of the cork came out via Ah-So, last 1/3 via waiters’corkscrew (and no residue pieces left in bottle), lovely honeyed, buttery, saline, mineral and dried fruit aromas and flavors, spot on balancing acidity, not youthful but extremely fresh and lively on the palate, better than the 1986 Clos and 1989 Valmur opened 1-2 months ago, I remain extremely impressed by the 1989s, long, lingering finish, absolutely outstanding 1er Cru Chablis!! — 17 days ago

2 hour decant(lots of chunky sediment). A gorgeous dark purplish garnet color. On the nose: Intoxicating notes of ripe dark fruit, forest floor, pencil shavings, herbaceous, smokey oak, minty chocolate. Taste: silky, rich, dense wine with dark cherry/plum, dark chocolate espresso, licorice, and a very spiced graphite/sour cherry never ending finish. YUM! 2003 vintage. *Full disclosure* Not the biggest Pavie fan as I've consistently found it underwhelming for the commanding pricing and eternally in need of yet "another hour" in a decanter. Great fill and opened with a Durand but feel that the cork (in great shape) would have come out decently easy with a standard wine key. Given my issues with Pavie in the past, brought over two decanters so as to agitate the wine between them four times. Initial pass, good amount of sediment with the vast majority of it caked onto the sides of the bottle. Yay! Great boysenberry/raspberry nose noted during the first decant. Tasted after two hours. Medium body. Some earth, the aforementioned berries and hints of rich chocolate cake, including frosting, on the scene. Despite all the lavished attention and fuss, still suspect this would show better twelve hours later at breakfast with waffles and Count Chocula cereal. High-maintenance for the bean-counters. 9.26.26. — 2 days ago
