No malo fermentation.
6 months on fine lees contact with regular batonnage and 12 months in bottle. Pale straw yellow.
Crisp, racy acidity with freshness and complexity.
White flowers, white grapefruit, sage, aromatic herbs and fresh cut grass.

Chocolatey, leathery mouth feel with mainly dark cherry from a fruit perspective. A tiny little spice on the back with a touch of nutmeg. Paired well with Goulash Di Manzo (short rib stew over polenta with mushrooms). — a month ago
