Paired beautifully with Fruits de terre at Rijks restaurant, Amsterdam — 6 months ago
À very young vintage that is tasting nicely despite the tannic structure. Smoother and softer than the Taurasi aglianico wines - this wine is pairing nicely with our Italian meal. If you can find a bottle - you’ll find this a great value discovery! — 10 months ago

Spicy, crunchy red fruit on the nose. All cranberry, raspberry, with some smoke and minerality with some hints of natural wine musk. Color is super light and pale, cranberry like red, with a light body and a beautiful, fruit punch of a palate. Flavor lingers for a loooong time, fresh with nicely integrated minerality, a little tartness in there, but dry, with all that juicy fruit, with that same kinda volcanic, smoky element skulking in the background. Great chilled, easy drinking juice that punches way over its weight class! — 7 months ago
Black licorice, dark berry, super structure with gentle integrated tannins. Supple. Long finish. Delicious. — 8 months ago
Dolomite minerality with tart fruit and herbs come through in spades. — 3 months ago
Bright, zesty, alpine, earthy, woodsy. — 3 months ago
Highly recommend, such a smooth and pleasant wine. This wine is from Italy’s Alto Adige Valley. — 7 months ago
— 8 months ago

Acidic, bright, great fruit and a spicy note. Really enjoyable and good price point. Il Cappricio Friday of Thanksgiving. — 8 months ago
Some buzz around this producer so approached with some anticipation. Restrained white flowers & confectionery Turkish delights on nose; mouthfeel quite smooth & elegant, w a stronger Riesling & Chenin Blanc presence, more of those white flowers & some RS. I’ve aged some other producers Timorasso w excellent results so see no reason this can’t do same, but this is drinking well young too. — a year ago

Popped and poured; enjoyed over the course of a few hours. The 2017 Pajé pours a garnet color with a transparent core; medium+ viscosity with no staining of the tears. On the nose, the wine is developing with notes of Morello cherry, cranberry, freeze dried strawberry, ground cumin, tar, talcum powder, old cedar chest, some varnish and dry gravelly earth. On the palate, the wine is bone dry with high tannin and medium+ acid. Confirming the notes from the nose. The finish is medium and loaded with savory minerals. Still very much in its youth, this was a lovely solar expression of Pajé. Drink now with patience through 2047. Bottle No. 2045/6666
