Assyrtiko Blend

Château Rayas

Réservé Châteauneuf-du-Pape Grenache Blend 2008

What a wine! Perfect garnet color. Smells of clean stables, roses, dry orange peel, herbs and stone. The wine softly coats the palate with vibrant red fruit and a symphony of acidity and balance that just envelope. Amazing wine. — 2 days ago

Bodegas y Viñedos Vega Sicilia

Unico Ribera del Duero Tempranillo Blend 2004

A favorite from Spain, the Ribera del Duero is a wonderful blend that gets the green light for approachability and high score for its depth and silkiness . Wow. Great balance and wonderful with a taste that touches the buds on the back of my tongue. — 19 hours ago

Château Haut-Brion

Pessac-Léognan Red Bordeaux Blend 1990

Saved in my cellar since purchasing it about 24 years ago. Deep purple color. Sooo smooth and silky. Some earthy tastes with tobacco flavors. No aftertaste. Just a little piece of heaven. 1990 vintage. — 8 days ago

Château Mouton Rothschild

Pauillac Red Bordeaux Blend 1995

Showing very well after 2 hours in the decanter but this is still very young and unresolved. Very enjoyable still but a long life ahead. — 3 days ago

Bollinger

Special Cuvée Brut Champagne Blend

First time pairing champagne and steak and yes, certainly works for me. Subtle and elegantly accentuates the creaminess on the palate. — 9 days ago

Château d'Yquem

Sauternes Sémillon-Sauvignon Blanc Blend 1999

Yellow gold with copper hue, quite thin pale rim . Caramelised pineapple, saffron , vanilla , creme brûlée , quite rich and decadent. On the palate again quite rich , barley sugar , creme brûlée and saffron, just enough acidity to balance and a little alcoholic warmth . On the medium length finish , lemon rind and a touch of caramel . This is probably at peak now , just misses a little vibrancy , freshness, however successful for the vintage . Drink now and over the next 10- 15 years — 10 days ago

Château Léoville-Las Cases

Grand Vin de Leoville du Marquis de las Cases Saint-Julien Red Bordeaux Blend 1982

42 years and retains dark ruby color with little coaxing required. No decant but opened bottle for about an hour. Cassis in broad shoulders yet elegant wine. Absolute delight. Long life remaining. Wow! — 2 days ago

I have an ‘82 that I have been sitting on. This is great encouragement! Appreciate the experience in avoiding a decant and the 98 result. So glad it delivered for you!

Château Cos d'Estournel

Saint-Estèphe Red Bordeaux Blend 1995

Opened around 8pm the evening prior, double decanted and left in room temperature until service on Friday evening. In total, this was opened 24hours before service. The 1995 pours a beautiful garnet with transparent core; medium viscosity with moderate stating of the tears. On the nose, the wine is developing with surprisingly boozy dark fruit. Brambles, cassis, bell pepper, licorice, spearmint and baking spices. On the palate, the wine is dry with medium+ tannins and medium+ acid. Confirming the notes from the nose. The finish is long with great acidity. Overall, remarkably youthful. While it’s certainly ready to go, it will likely continue some positive evolution over the next couple of decades. Drink now with a long decant through 2045. — 12 days ago

Domaine du Pegau

Cuvée Réservé Châteauneuf-du-Pape Red Rhone Blend 2005

Opened and poured into a decanter about four hours prior to service. The 2005 pours a deep garnet with a near opaque core; medium+ viscosity with no staining of the tears and some sediment. One the nose, the wine is developing with powerful notes of ripe brambles, garrigue, cool spices, leather, licorice, and espresso. On the palate, the wine is dry with medium+ tannins and medium+ acid. Confirming the notes from the nose. The finish is long, tart and sapid. A wine of pedigree and yet, has a rusticity that gives a nod to its origin. Drink now through 2035+? — 12 days ago
