More notes later as I just poured it out and wow! In an amazing place. So supple and rich but fresh. Really gamey and meaty with fantastic freshness and vivid cherry fruit. Really amazing overnight. So sappy, succulent, pure and balanced. Just gorgeous wine. — 13 days ago

Hilltop Paso Robles Cabernet Sauvignon 2021

Delectable Wine
9.1

The 2021 Cabernet Sauvignon Hilltop lifts from the glass with a peppery freshness, mixing hints of sage with chalk dust and blackberries. It's soothingly round and supple with ripe red and black fruits underscored by saline minerals as grippy tannins mount toward the close. This finishes structured with medium length, leaving the palate refreshed while maintaining youthful poise. (Eric Guido, Vinous, July 2024)

Pure Paso Proprietary Red Cabernet Sauvignon Blend

v20. Hard to beat Paso Red Blend. Very good! Soft, Smokey, candied nose. Fresh, deep, blackberry and soft tar fruit. Bright, peppery, chocolate and hint of leather finish. Nicely balanced… go to Red Blend. Very good! — 8 days ago

Great standby Riesling and an excellent value at ~$16-18 - a tinge sweet and leans towards the plushier, fruitier Riesling style. Very low petrol notes, tastes like honeyed green grapes, white flowers. — 5 days ago

Seven Oaks Paso Robles Cabernet Sauvignon

v21. As soon as you open , pour and sniff…imagine crushing a bunch of Cabernet grapes in your hand in the barrel room of a winery, this is the smell you get opening this wine! This wine consistently over delivers.
Nose evolves to soft tobacco.
Luscious, juicy blackberry fruit. Smooth, spicy, velvety, chocolate finish. Great entertaining wine!

Sometimes an older bottle just hits and wow tbh is killing it? Nose is dusty bookshelves, old books, glorious spice and some faint cherry but the story is the palate. Wow. Just perfect. Sensual texture, hit of opulence, great acids and freshness, barely sweet fruit and killer length. What one wants out of an aged wine. Fantastical. — a month ago
