I used an Ah-So which ended up being merely a precaution since the top of the cork looked a bit dry. Turns out it was fine. Acidity was stunning at 15 years, some dried fruit on top of cherry compote with ethereal traces of tannins at the end. Delicious SRH Pinot Noir. This 2016 blanc de noirs sparkler — made with Pinot Noir hailing from the Bien Nacido Vineyard — is medium gold in appearance, with a fine and creamy mousse, and fresh notes of just-ripe yellow apple, pear, white peach, lemon zest, citrus blossom, biscuit, toast, brioche, toasted almond, and marzipan. It has a lingering, elegant finish.
