Produced from the "mosto flor" ("free-run juice") of sustainably grown and hand-harvested grapes. Ya means "yes!" in Spain. Straw yellow with good flow of tiny bubbles and light mousse. This one has fleshed out nicely over the last 2 years, showing better balance and integration of flavors. Acidity has become more mellow. Nose of lava/asphalt/petrol and grilled lemon. Very mineral, earthy, and austere on the palate as well. Lemony, smoky and salty finish. Almost like a shot of tequila…! 🌵 🍋 🧂
