Popped and poured; enjoyed as an aperitif prior to dinner. The NV Brut Rosé pours a very pretty pink color with a persistent mousse. On the nose, the wine is developing with notes of raspberry, strawberry, spring flowers, some brioche, lemon citrus and minerals. On the palate, the wine is dry with medium+ acid. The fruit is round in a good way. Balanced. Confirming the notes from the nose. The finish is long and chalky. This is a classy NV Rosé that’s easy for the wine nerd and the crowd to appreciate. 1998 not the best Napa Cabernet vintage. However, good producers still find their way through difficult vintages. Joseph Phelps is the rule rather than the exception.

This was poured out of magnum and drinking beautifully by their Hospitality Manger.

Nicely ripe, lush juicy fruits of blackberries, blackberries, both plums, some purple & blue fruits. Dash of spice & lead pencil, anise-black licorice, soft baking spices, caramel notes, some dark chocolate, fresh dark flowers, round acidity and a well balanced, softened structure & tension, elegant, nicely evolved finish that lasted a full minute.

En Remilly Saint-Aubin 1er Cru Chardonnay 2017

Served this beauty on 2 occasions with Vinloq Preservation

DAY 1
👃Precocious yellow fruit (grapefruit and lemon) and green apples, flinty minerals, white pepper, and grassy herbals
👅Lemon oil with white pepper and spirited minerality. The fruit is more round and more restrained than on the nose.
Salty. Great acidity. The oak treatment is spot on. Long dry, mineral laced finish. So good

The remaining wine was Slow Decanted in my refrigerator and finished a week later

DAY 7
Such a glorious nose on this burgundy. Really delightful. White flowers and peach and even some tropical fruit notes. Flinty and expressive. Totally lovely on both occasions

I knew this was likely young but I was curious to try my first bottle. It's clearly drinking well now but it's going to be stellar with more bottle age.
I am looking forward to revisiting another bottle in time🥂

Nose was closed for the first 90 mins. Now giving way to gentle tobacco and dark cherry A touch dry on the front of the palate but rounds out into a juicy and long finish. Very nice. — a month ago

Pauillac Red Bordeaux Blend 2023

Beautiful subtle aroma from Merlot makes it pretty. Its free spirit nose makes you feel what the wine is going to be about. Drinkable and fresh. Apparently missing weight but it doesn’t miss a bit all the way thru the tasting. The aftertaste is long and very, very pleasant after one minute. — 2 months ago

Margaux Red Bordeaux Blend 2015

Way too early. I have a few 375mL bottles and was curious to learn how a wine like this might be even though it was well before it’s suggested drinking window. The bones and structure are evident and this should grow into a monster. It was still a very pleasant wine it was just holding back the whole time. Unfocused fruit and a bit too sweet but I think this score will be significantly higher for round 2. — 9 months ago

Another night, another insane Krug. Tessa’s palate has certainly been calibrated for this because the blind was instantly untangled by her - this is Krug… 02’ perhaps? Boom! Thanks for sharing this, Toni. Typical Krug opulence, yet so energetic. Just starting to mature, it combined ripeness, great structure, and phenolic grip, with deep mineral drive and acidity. Just hitting it’s stride, but I reckon it still has a long way to go. Love it! — 2 years ago

I tasted this at cork pull and it looked & tasted a bit brickish. Waited to decant but it still needed a hour in the decanter. 97 a great Napa vintage. Well stored bottle bought from auction.

The fruits are lush, velvety & ruby; blackberries, black plum, plum pudding, black raspberries, dark cherries, strawberries & blueberry hues. Dark chocolate, mocha, salted caramel, malt balls on the long decant, black licorice, there is a touch of v/a-bandaid but it’s not spoiling and dissipates some in time, dusty to slightly moist top soil, olive tapenade, herbaceous notes, soft, dark spice, half used, dry tobacco w/ ash, sandalwood, moist, grey volcanic clay, limestone, dry crushed rocks, notes of black pepper, candied, liquid, fresh & mostly withering, dark, red, purple flowers, very round acidity and a very well balanced, tensioned, nicely structured and a smartly polished, round finish that lasts two-minutes.

Second wine to pair with/ Allen Brothers Cover Ribs.

Dom Pérignon

Brut Champagne Blend 2004

Absolutely delicious champagne. I think the only other Dom I’ve had from 04 was the metamorphosis. This is much nuttier - in a nice way. Fine bubbles, great mouthfeel, very long finish, good acid. Overall perhaps slightly less refined and deep than I was hoping, but still a treat. Nice pairing with a shrimp etouffe that I was inspired to make after a recent trip to New Orleans. — 8 months ago

Reserva Viña Ardanza Rioja Tempranillo Garnacha 2015

This will please some garnacha fans, though I can’t say it’s my ideal Reserva blend. 78% Tempranillo and 22% garnancha, which seems like way too much. Has a sweaty sock aroma that blends with some cherry and vanilla flavors. Almost like a tart cherry pie. The cherry flavors continue throughout with some chocolate and a bit of caramel. Round and silky, and seems loosely structured. Just slightly less dimensional than I would want. — 2 years ago
