Opened around 8pm the evening prior, double decanted and left in room temperature until service on Friday evening. In total, this was opened 24hours before service. The 1995 pours a beautiful garnet with transparent core; medium viscosity with moderate stating of the tears. On the nose, the wine is developing with surprisingly boozy dark fruit. Brambles, cassis, bell pepper, licorice, spearmint and baking spices. On the palate, the wine is dry with medium+ tannins and medium+ acid. Confirming the notes from the nose. The finish is long with great acidity. Overall, remarkably youthful. While it’s certainly ready to go, it will likely continue some positive evolution over the next couple of decades. If I could use just one word? Intense! Still tight but the layers of dark fruit are starting to shine through the angular, lead pencil soaked tannins. Flight #2 of our 1997 Retrospective and these were the thoroughbreds. Presented single-blind; no formal notes. Wine #1 had great color, was developing, and probably the earthiest of the group but still had a lovely fruit profile. A really nice balance of fruit and non-fruits. Robust structure. Notably, this was the only bottle in the flight that had Brettanomyces…and while I found it to quite charming, this is what ultimately got me hung up on whether I thought this was the Dominus or the Monte Bello. Ultimately I called the later. I really dig this and wish I could afford more Dominus in my life. Drink now and through 2035. — 5 months ago

First time in a long time trying Grüner Veltliner! I found this wine quite hard to get into, possibly because of unfamiliarity, or perhaps the style of wine? There’s no denying this is pretty fantastic stuff, herbaceous and mineral with great salinity and juiciness on the palate. It’s super concentrated, full-bodied and really quite youthful – I just think it might not be my cup of tea! Still, I’ll hold on to the remaining bottles I have and try another in a few years’ time. (Late amendment to this note: this wine came into its own with a simple dish of sea bass & lemon - definitely a wine for food!) — a month ago
