Caymus Vineyards

Napa Valley Cabernet Sauvignon 2007

Somm David T
9.6

I think if you read this nonsense I post, you know how I feel about this producer, past & present. This 07 is outstanding & top of its bell curve. It is so good to revisit these great vintages of Caymus Classic.

This is fresher than the 97. It is rich/lush, cassis to currents, ripe, blackberries, black raspberries, black plum, raspberries & strawberries. Dark chocolate, mocha, classic, beautiful, Caymus Classic spice that I miss dearly in their new wines, black licorice, fudge, clove, cinnamon, nutmeg & vanillin, most top soil, limestone, dry herbs, dry tobacco, barrel shavings, taut leather, volcanic grey clay, dark, fresh & slightly withering flowers, violets, beautiful round acidity, balance, structure, nice tension and elegant finish that last minutes and falls on spice and evoluted earth tones.

This bottle is in fine shape. Still strong and will last another 10 years of fine drinking. Phenomenal vintage and time to enjoy.

Château Cos d'Estournel

Saint-Estèphe Red Bordeaux Blend 2016

Pretty deep ruby , thin ruby rim . This is quite closed at first , but very focused mineral and grafite , oyster shell notes with dark blackcurrant and blackberry notes , spicy touches too . On the palate this is really focused and reserved , lots of mineral tinged black fruits , tobacco , oyster shell . Quite rich yet very good balance, fresh acidity . Ripe but gritty tannins , saline and really long finish . Accessible now , but really destined for the long term. Wait another 5-10 years , will drink well a further 20 . Bonneau du Martray

Corton-Charlemagne Grand Cru Chardonnay 2011

A pristine bottle tonight, and I particularly love the vintage for the producer, as it captures the perfect balance of richness and focus. It’s exceptionally detailed, powerful and layered with lemon cream pie-white flower aromatics with a deep, creamy and mineral inflicted palate. In top shape, and may even outlast the surrounding 10/12 vintages which are almost always premoxed. — 2 months ago

Château Latour

Premier Grand Cru Classé Pauillac Red Bordeaux Blend 1983

Château Latour is an iconic estate in the Pauillac commune on the left bank of Bordeaux, achieving coveted ‘First Growth’ status in the 1855 Bordeaux Classification.

The estate has roots dating back to the 14th century and derives its name ‘La Tour’ from a fortress tower built during the Hundred Years’ War, which no longer exists but is prominently featured on the label in recognition of its history.

We weren’t sure what to expect, as many have predicted these 1983s are likely past their prime, but this wine was a masterpiece. 🤩

It was medium garnet in color with expressive notes of cedar box, cigar, clove, peat, leather, forest floor, fig, prune, dried black cherry, plum, cassis, blackberry compote, cardamom, cinnamon, star anise, dried violet, potpourri, kalamata olive, pencil shavings, graphite, & bacon fat.

It had the most velvety, fine-grained tannins that washed across the palate with ease, with a gentle but notable acidity that maintained lift and balance. It was concentrated, complex, and had a long, elegant finish.

Château Pichon-Longueville Baron

Baron de Pichon-Longueville Pauillac Red Bordeaux Blend 2000

Pretty deep garnet ruby , garnet rim . This is pretty open and aromatic, with smoky creme de cassis , grafite , blackberry and cedar , light herbal touches , really quite classic and noble . On the palate this has good balance and density , good freshness also . Ripe , very fine but perceptible tannins . Dark fruits , grafite , tobacco , long and detailed slightly mineral notes on the good length finish . Really elegant , though quite serious and traditional, not easy to pull off. This is drinking perfectly now (Coravin might have helped here , I would certainly decant if I had a full bottle) , though still quite fruit driven with some tertiary complexity coming through . Really harmonious and complex . From now and over the next 15 years, maybe more . At Doppo Restaurant, Soho . — a month ago

Wow 🚀 that was an exciting line up of wines and it seems like the Pichon, Brunello and Lynch Bages were the cream of the crop

Had one of mine two years ago. Didn’t think it was ready like a lot 2000’s I’ve had so far. Think it is either a forever vintage or just not living up to the hype of 2000? Cheers! 🍷

I thought this was really quite excellent @Somm David T , it did seem quite open , though this might be to do with it being under Coravin.. I would certainly decant for a while if opening a bottle . Or alternatively leaving for another 5-10 years will do no harm at all . One of the better 2000s I have had , in some ways it is a bit of a hit or miss vintage .. but the peaks are very high . Hope you enjoy your other bottles !

Opus One

Napa Valley Cabernet Sauvignon Blend 2004

At over 20 years old, the 2004 Opus One is showing beautifully, striking a balance between maturity and vibrancy. On the nose, it opens with an inviting bouquet of ripe blackberries, cassis, and dark cherries, layered with subtle notes of violet, tobacco, and espresso.
On the palate, the wine is smooth and full-bodied, with fine-grained tannins and a silky texture that coats the mouth without being heavy. The core is rich with dark fruit—black plum, currant, and a touch of blueberry—balanced by earthy undertones and a whisper of leather. Definitely one of my favorites.

Dang this is drinking well. Subdued fruity nose and rich purple color. Great balance with spice and tons of black fruit. Tempted to say hold but not too long so one can enjoy the fruits — 5 months ago
