Really impressive on opening. Tastes like a Pinot noir should. Cherries, rose, a bit of fern like hiking in CA redwood grove, there’s some strawberry, some dust, plum skin. Interestingly the aftertaste, maybe 20 seconds later suddenly has a sweetness to it that I really enjoy. Drinking really well now on opening. Grateful to try this. — 14 days ago

Popped and poured; enjoyed over the course of an hour. The 2021 “Fourchaume” pours a straw color; medium viscosity. On the nose, the wine is youthful with pineapple popsicle, lemon curd, and steely minerals. On the palate, the wine is dry with high acid. Confirming the notes from the nose. The finish is long and refreshing. This is a beautifully balanced, elegant Chablis with intense minerality. It’s drinking well now but I expect it will be lovely well past 2031.
