Medium lemon yellow . Quite closed at first , with some toasted brioche and touch of lemon peel , white flowers, stem ginger , quite rich impression . On the palate this is quite creamy and rounded , candied peel , honey , rich pastries , with quite high mineral tinged acidity . Good long , mineral tinged finish . Needs a bit more time though I don’t get the feeling this will be as profound or as long lived as the 2012. Better in 5 years and will continue to drink well a further 10. — 5 days ago

Opened about 30min prior to service. The 2017 Clos Ste. Hune pours a pale straw color with medium viscosity. On the nose, the wine is developing wjth beguiling notes of the perfectly ripe Comice pear, a mix of stone and tropical fruits, lemon blossom, a touch of petrol and minerals. On the palate, the wine is dry with high acid. Confirming the notes from the nose, the finish lasts forever. This is unbelievably balanced and a fantastic pairing with the toro crudo. This is just at the beginning of what’s sure to be a very long drinking window. Enjoy now through 2057. — 2 months ago

On the palate complex flavors of apple, peach, pineapple and lemon citrus, well balanced with acidity on a nice mouthfeel. Superb for its humble appellation. Delicate nose needs a little coaxing, but when it comes through it’s got ripe lemon, a little moist limestoney gravel, and a faint hazelnut note. In the mouth it’s a little less shy, with a Meursault-like amalgam of smoky gravel, lemon oil, and dry oatmeal, though in a lighter format. Fantastic acids. Finish is quite lingering. Is it worth $90? Well, if you’re in the mood for PYCM and see it on the shelf, then, yes, you take it home. I was, I saw, I took home.

UPDATE: two hours later, as it warms and breathes, holy cow, what a wine. More of everything. Upping from 9.2 to 9.3. Yes, 9.3 for a Bourgogne Blanc. — 5 days ago

Popped and poured; enjoyed over the course of an hour. The 2015 pours a crystal clear, pale straw color with persistent mousse. On the nose, the wine is developing with bright green apple, star fruit, citrus tree blossom, lemon curd and minerals. On the palate, the wine is dry with high acid. Confirming the notes from the nose, the finish is long. This is a baby but there’s already a lot of material here. The texture is extraordinary. Expect a long life ahead. Drink now with maybe a short decant, through 2055. Third tranche. Disgorged September of 2025. — 2 months ago

Cork broke into two pieces, but got the bottom 1/3 carefully using a standard French waiter, no cork was left in the bottle. Color looks quite youthful for a 36-year-old Grand Cru Chablis, initially some SO2/matchstick aromas, but they blew off quickly. Followed by lemon, mineral, flavors are similar, perfect, lively acidity, great persistence and length, for Chablis I suppose 1990 was a warmer vintage (13.5% ABV), but this bottle is amazing and almost perfect, WOW!!’ — 5 months ago

Medium gold . Quite rich and decadent on the nose with buttered popcorn , light toasty hints , lemon confit , orange rind , hints of chalk underneath . There is a light nuttiness , too so certainly showing some age . On the palate this has good intensity and grip , slightly advanced perhaps (certainly older than the Chevalier) , with buttered toast , touch of caramel and lemon rind , hint of bitterness on the palate . Quite high bracing acidity and enough freshness on the finish . I would drink this now and over the next few years , though there may be fresher bottles out there . Re released from the domaine in 2019, with wax capsule and Diam cork. — 5 months ago
