Popped and poured; enjoyed over the course of an hour. The 2021 “Fourchaume” pours a straw color; medium viscosity. On the nose, the wine is youthful with pineapple popsicle, lemon curd, and steely minerals. On the palate, the wine is dry with high acid. Confirming the notes from the nose. The finish is long and refreshing. This is a beautifully balanced, elegant Chablis with intense minerality. It’s drinking well now but I expect it will be lovely well past 2031. This wine is the 2021 Domaine Louis Boillot & Fils Gevrey-Chambertin. It offers a shimmering medium ruby hue with nuanced red-fruit and earthy characteristics that effortlessly leap from the glass, especially after some time decanting. There’s also a delicate crème brûlée and toasty note that adds dimension.

A distinct shade of medium old gold with with persistent little bubbles. The nose is resplendent with apples of the green variety. An abundance of citrus scents along with yeast and a touch of nuttiness. Just a bit of smeared honey aromas goes a long way here.

Biodynamic and beautiful. Zero dosage and aged for six years, the strength here is balance and purity. Terroir driven and electric, this is an incisive and focused champagne. Composed of 85/15 Pinot Noir/Chardonnay and wonderfully dry. Lemons and dried herbs on the palate along with cherries and apples. Long and dry and lovely. — 3 months ago

2021 vintage. Excellent, entry-level producer into the vagaries of (red) Burgundy. Things only ramp up (SUBSTANTIALLY!!!) from here. 1er Cru juice in the bargain section.
