C’est à Ma Cave Fleury que nous goûtons le Beaujolais-Villages de France Gonzalves et pan! C’est exacement ce que j’attends d’un Beaujolais : le fruit, la légéreté, le croquant, le côté gouleyant, le nez charmeur, la couleur et en bouche c’est limpide, franc, bon. C’est un Beaujolais charmant !
Ensuite, c’est @LeRubis !
Si l’an dernier nous avions adoré le vin de Jean Foillard, cette année, nous étions charmés par Dufaitre et Lapalu. Cela n’engage que nous et c’est hautement subjectif ;) Quoi qu’il en soit, ils étaient tous très bons !

Restaurant week at Officina and a perfect wine for our three course meal. Thank you Natalie for the recommendation. Deep ruby red in appearance. Took some time to open up on the nose but showed layers of mocha, floral, touch of minerals, blue and black fruits and spices. Medium tannins (5.5/10) with balanced acidity and a medium plus body. Plush Merlot definitely comes through in the mid palate with black currants, black cherries, chocolate, espresso and a touch of earthiness. Long and lingering finish. Drink till 2023.

Crazy good wine for only $60.00 on a wine list. Made up of 50% Sangiovese with the remainder made up of Cabernet Sauvignon, Merlot and Syrah, making this a true Super Tuscan Blend. All the Sangiovese is aged in stainless steel while the rest are aged in barriques. This wine is from an area in the southern part of Tuscany called Maremma, more specifically Upper Maremma in the Colline Metallifare zone. Need to find some more of this IGT. Label is designed by Raffaele De Rosa.

No es una sorpresa porque si es un #vino de Raúl Pérez no debería ser raro tomar algo de tanta calidad. Tuve la suerte de tomar dos añadas diferentes en dos días de la misma semana la 2012 y la 2010. La cata la hice del 12 pero el 10 esta aun mejor. Visual es un vino de intensidad alta. Nariz es un juego de tiempo y paciencia primeros olores de compota de ciruelas, arándanos, aparecen las especies y al paso de los minutos reconocí la pimienta verde, cardamomo. En boca de entrada tiene un volumen denso, con una acidez fresca , redonda , sus taninos un poco integrados y finos , largo en boca y persistente frescor en boca. Boire un vin d’Alsace de la maison Binner, c’est toujours un moment particulier. Non seulement car la maîtrise de ce vigneron est incroyable mais aussi car ses vins ont tous une identité, une signature.
Mais lorsque l’on vient à ouvrir un Tokay Pinot gris « Cuvée Béatrice » de 1997, l’expérience devient alors magnifique !
La robe cuivrée et limpide laisse deviner que le temps a fait son travail de maturation et de concentration des arômes. Et pourtant, il n’a en rien altéré la fraîcheur de ce vin. Le nez est resté somptueux et intact, opulent et généreux, sur une légère note de miel brioché. Les fruits blancs sont compotés alors que les fleurs, blanches elles aussi, restent délicatement présentes et spontanées.
En bouche, le volume est large et imposant. On trouve ce qu’il faut de sucre et d’acidité, ce qui crée un vin rond, moelleux, très légèrement liquoreux tout en restant parfaitement équilibré. La longueur vient finir parfaitement l’expérience, grâce notamment à une belle matière.
Ce n’est plus un vin, mais une véritable gourmandise, vers laquelle on revient avec enthousiasme, par pur plaisir des sens.
Et alors même que le niveau de notre bouteille baisse à vive allure, on se dit que vraiment, il y a du talent, énormément de talent du côté d’Ammerschwihr, en Alsace.
Voici la description de vins de Christian Binner que l’on trouve dans le dernier cahier Le Rouge et Le Blanc : « Fruité, gourmandise, soyeux des tannins, humilité, simplicité, spontanéité, buvabilité ». Tout ça est exact !
Comme d’habitude avec Christian Binner, pas de secret sur la manière dont le vin est fait : « Pinot Gris 1997 ce Pinot gris a été récolté sur nos parcelles de Granite migmatique enherbées, labourées et cultivées sans engrais. Les raisins ont été récoltés manuellement, par tris fin octobre, à une grande Maturité comme toutes les Cuvées Béatrice élaborées dans notre Domaine. Une fermentation de plusieurs mois en foudres de chênes centenaires s’est suivie d’un élevage sur lies fines, le tout sans ajout de levures ni chaptalisation, ni filtration excessive. Cette vinification non interventionniste à l’abri des techniques œnologiques modernes nous permet de préserver au maximum la Qualité intrinsèque du raisin. Un léger dépôt peut se former au fond de la bouteille, veuillez verser délicatement. » (contre-étiquette)

Nous annonçons officiellement la saison de la raclette 2014/2015 ouverte ! Ben quoi ? Si nous le faisons pas, qui va le faire ? Personne !
Avec de la raclette on boit quoi ? De la Roussette de Savoie ! Je vous vois déjà venir, la Roussette (cépage aussi appelé Altesse), ouais, bof. On va compter jusqu'à 3 et à 3, vous aurez oubliez tout ce que vous avez déjà goûté en Roussette, et vous pénètrerez dans un nouvel univers gustatif, olfactif (et pif et paf), attention : 1, 2...3 !
Pour commencer, il faut préciser que ce vin est réalisé dans les règles de l'art, de façon traditionnelle et non-interventionniste : vendangé à la main, avec une vinification sans intrant et sans aucun ajout de soufre (donc pas de mal de crâne à l'horizon), puis une année d'élevage en foudre et enfin on attend jusqu'à ce que le vin soit prêt à la vente (1 an).
La robe est claire, limpide, le nez s'ouvre pleinement en offrant une large palette aromatique où se mélangent fleurs blanches, miel et pâte de fruit, sur de légères notes agrumées.
La bouche : délicate et fleurie (aussi), elle s'inscrit parfaitement dans la continuité du nez et offre une belle acidité, sur la craie, avec une longueur tout en gourmandise (coing, fruits secs). La maîtrise est bluffante et le rendu impeccable ;)
Conclusion : un vin superbe, très près de l'exceptionnel qui fonctionnera parfaitement lors d'un apéritif plutôt marin (tartare d'algues, anchois, sardines) ou sur un poisson de lac. Bien évidement, c'est sur la raclette qu'il prendra toute son aise, c'est même délicieux.

This wine helped me take a little escape to the island of Corsica, the home of the one and only Napoleon Bonaparte. This is one of 2 amazing rose wines from Marquiliani. This was my first Gris rose from Marquiliani and it's been a few years since I hade the regular rose.
Domaine Marquiliani is one of the top producers of wine (and olive oil & almonds) on the island and are a small family owned and operated by Anne Amalric and her father Daniel who founded the modern history of this winery in the 1950s.
Pale and watery in color, this is the "Gris" rose. Gorgeous notes of pink citrus, jasmine florals, minerals and fennel seed, no doubt from the high dose of Syrah in the blend. The wine grew tremendously in the glass and after an hour it was firing on all cylinders. Elegant on the palate with a stunning density and length on the nose. Pure and refreshing, it appealed to both the intellectual and hedonistic side of my tastes. Gorgeous, buying more ASAP!
