Napa Valley Cabernet Sauvignon 2016

High expectations for this wine. Great vintage and great producer

Starts out dark and closed. Appears to need a lot of airtime. Into the decanter

2 hours later it’s paired with short ribs and the fattiness seems to bring out some better flavor and the dark flavors really complement the meat.

Post dinner this wine is beginning to show something but it’s still dark brooding and too tight.

I’m going to let the other bottles sit for a few years. I’ve found the more recent coombsville wines from 2019 and forward to me a lot more open and fruity.

Medium deep , ruby centre and ruby rim . Dark blackberry , spicy tobacco , earthy currants , coffee . On the palate quite dark fruit focused , blackcurrant , blackberry , dark cherry . With time in the glass this seems to show a bit more of the earthy , tobacco notes also present on the nose. Quite high fresh acidity , slightly gritty tannins , quite good tobacco tinged finish . This is showing well now but will age well for a further decade — 22 days ago

Domaine de Thalabert Crozes-Hermitage Syrah 2015

From Magnum. Opened about an hour before dinner; enjoyed over the course of two days. Best after a couple of hours. The 2015 “Domaine de Thalabert”pours a deep ruby/purple color with a near opaque core; medium+ viscosity with significant staining of tears and signs of sediment. On the nose, the wine is developing with notes of ripe and desiccated fruit: blueberries, figs, lavender, Kalamata olive, leather, coffee, Bacon fat, spices, and organic earth. On the palate, the wine is dry with medium tannin and medium acid. Confirming the notes from the nose. The finish is medium. This was pretty shy and awkward early but after significant air, it came alive. Lots of life left. Drink now through 2035. — 18 days ago
