Pretty deep garnet ruby , garnet rim . This is pretty open and aromatic, with smoky creme de cassis , grafite , blackberry and cedar , light herbal touches , really quite classic and noble . On the palate this has good balance and density , good freshness also . Ripe , very fine but perceptible tannins . Dark fruits , grafite , tobacco , long and detailed slightly mineral notes on the good length finish . Really elegant , though quite serious and traditional, not easy to pull off. This is drinking perfectly now (Coravin might have helped here , I would certainly decant if I had a full bottle) , though still quite fruit driven with some tertiary complexity coming through . Mid crimson with a tawny rim showing its age. Just as impressive as the 2000 vintage which tends to get the accolades. This blend is 69% Cabernet Sauvignon, 19% Merlot and 12% Cabernet Franc. Aromatics of an old flower arrangement that had dried off with mature black fruits and cedar. My last bottle at 24 years of age but many say this could carry on until the mid 2030s. A classic Bordeaux living up to its “Super Second” standing. — 18 days ago

Medium deep garnet with a terracotta rim . This has some sous bois , earthy tobacco , coffee grinds , herbal touches , cedar and dried currants . On the palate this is quite dense and classic in profile , still quite a lot of tannin , sous bois , cedar , some cassis , tobacco and a little herbal. Quite stocky and chunky . Medium length , and balanced acidity . This is still quite dense on the palate , with grippy , slightly rustic tannins . Probably just past peak , but will hold over the next 5 years or so . I think if you read this nonsense I post, you know how I feel about this producer, past & present. This 07 is outstanding & top of its bell curve. It is so good to revisit these great vintages of Caymus Classic.

This is fresher than the 97. It is rich/lush, cassis to currents, ripe, blackberries, black raspberries, black plum, raspberries & strawberries. Dark chocolate, mocha, classic, beautiful, Caymus Classic spice that I miss dearly in their new wines, black licorice, fudge, clove, cinnamon, nutmeg & vanillin, most top soil, limestone, dry herbs, dry tobacco, barrel shavings, taut leather, volcanic grey clay, dark, fresh & slightly withering flowers, violets, beautiful round acidity, balance, structure, nice tension and elegant finish that last minutes and falls on spice and evoluted earth tones.

This bottle is in fine shape. Still strong and will last another 10 years of fine drinking. Phenomenal vintage and time to enjoy. — 2 months ago
